I love kale salads because of the crunchy firm leaves and you can't beat the health benefits of kale. Ingredients: - bunch kale - mixed greens (arugula, spinach,..) - 1 apple, chopped - strawberry - pumpkin seeds, toasted - 2 tbsp balsamico - pink salt and lemon juice to taste.
